Going vegan almost 5 years ago, I remember how hard it was to transition. I felt like every recipe I found was either a smoothie or made up of kale and quinoa. I look back through photos early on and they are plain and boring. I remember struggling to figure out what to make, and how to plan meals. I’ve learned quite a bit since then, like eating vegan doesn’t have to be plain and boring, and when in doubt, add cheese sauce. Flax Kitchen is where I am sharing my family-friendly recipes with you, whether you’re a long time vegan, trying to reduce your footprint, or just partaking in Meatless Monday. Meal planning is hard, something most people struggle with. As an avid meal planner I have some tricks up my sleeve to share that will take your meal planning game from struggling to winning.
I am passionate about food and saving our planet. I wish everyone would eat plant based, I really do. We’d solve a lot of problems from health care to world hunger. But I am a firm believer in taking your time and figuring out how to swap things out so you create something that is sustainable. Veganism, or eating plant based, is not a diet but a lifestyle. It’s not about cutting calories, it’s about ending animal suffering and the needless depletion of resources caused by animal agriculture and factory farming. I choose to eat this way for the animals, for the environment, and for my health.
I’m a wife and mom to two girls. I enjoy reading, can’t live without my daily latte, and dreaming of far off places. I live in Southern California, in a little house we renovated ourselves, complete with a picket fence.
