Super delicious, simple and easy pico de gallo- 5 ingredients and 10 minutes. Perfect for topping all the things, or just for dipping chips.
Pico de Gallo is not something you really need a recipe for. Its super basic: tomatoes, onions, cilantro, lime and salt. However, not all pico de gallo salsas are created equal. There is a local Mexican place we ate at for YEARS with my absolute favorite salsa, which is of course what has inspired this one. It’s fresh, bright, and SO GOOD on all the things- chips, tacos, burritos, quesadillas- literally everything. This doesn’t have any spice, so feel free to add some jalapeños here. I prefer to keep it fresh and add spice in the form of hot sauce, if needed.
We’re using lots of lime juice here, and the longer it sits, the juicer it gets. It’s best used within 3 days, but it’s very unlikely it will be around that long! This is 1000 times better than any store-bought salsa, and is really worth the few minutes it takes to make.

Easy Pico de Gallo Recipe
Ingredients
- 4 roma tomatoes
- ½ white onion
- ½ cup cilantro, chopped
- juice of 1 lime
- salt, to taste
Instructions
- Finely dice the onion. De-seed and chop the tomatoes.
- To a bowl, add the diced onion, chopped tomatoes, chopped cilantro, lime juice, and salt. Mix well.
- Serve immediately, or cover and refrigerate until ready to serve. Keeps well refrigerated for 2-3 days.
