A twist on the classic margarita- fresh pineapple and spicy pineapple create a balanced combination that is spicy and sweet, delicious, and refreshing.
I love margaritas. Like, looove them. And while I love a good classic margarita, I wanted to try something different. Enter: pineapple. But with a kick! Sweet, fresh pineapple creates the base for this refreshing cocktail, but the hint of spice from the jalapeño keeps it from becoming too sweet. Go for a classic salted rim, or better yet try a Tajin rim!
Ingredient Notes
Pineapple– I’ve used fresh pineapple here- it takes two seconds in the blender but feel free to use canned pineapple juice if you’d prefer.
Jalapeño– The spice isn’t overpowering, it balances the sweetness perfectly. If you’re sensitive to spice you can use less than the recipe amount.
Tajin– Tajin is basically salt and chili powder so it’s a fun twist on a spicy margarita. You can definitely use regular margarita salt here, or omit a rim completely.
How to Make a Spicy Pineapple Margarita
Adding fresh pineapple to a margarita is slightly more work than a classic lime-only margarita but it’s well worth the effort, and fresh pineapple around is never a bad idea.
- Cut your pineapple. Remove top leaves and bottom. Then remove the rough, outer skin. Next cut one side off being careful to leave the core in the middle. Repeat with the opposite side and then the other two sides. You’ll end up with a square core that you can toss.
- Taking one of the sides, chop into a few smaller pieces and place into a blender. Blend on high for 1-2 minutes or until the fruit is blended. It will look a bit foamy, but that’s ok.
- Slice a jalapeno into coins.
- Rim your glass and set aside.
- To a cocktail shaker with ice add tequila, orange liqueur, pineapple juice, lime juice, agave, and jalapeño coins. Shake several times until well mixed and the shaker is cold.
- Strain over ice and add more jalapeño coins for garnish.

Spicy Pineapple Margarita
Ingredients
- 2 oz fresh pineapple juice
- 2 oz silver tequila
- 1 oz cointreau
- juice of 2 limes
- 1 jalapeño cut into "coins"
- squirt of agave, optional
- salt or tajin for rim, optional
Instructions
- Prepare pineapple. Remove top leaves and bottom of pineapple. Then remove the rough, outer skin. Next cut one side off being careful to leave the core in the middle. Repeat with the opposite side and then the other two sides. You’ll end up with a square core that you can toss.
- Cut the pineapple into smaller pieces. Add about ¼ of the pineapple to the blender and blend on high for 1-2 minutes or until the pineapple is completely blended.
- Cut the jalapeño into coins.
- Rim glass with salt or tajin by first running a lime wedge along rim and then turning glass upside down onto a plate with salt or tan. Set glass aside.
- Add pineapple juice, tequila, cointreau, lime juice, agave, and 3 jalapeño coins to a cocktail shaker with ice. Shake vigorously several times until drink is well mixed.
- Add ice to prepared glass and strain cocktail shaker over ice. Garnish with additional jalapeño coins.
