Vegan Banana Bread
This vegan banana bread is simple & perfect- moist, flavorful, and not overly sweet. Enjoy it with coffee for breakfast, have it in the afternoon for a snack, anytime is perfect for vegan banana bread!

Ingredients

ripe bananas
1
flax egg
(1 tbsp ground flax seeds + 2 tbsp water)

vegan butter, softened

white sugar

brown sugar

vanilla extract

all purpose flour

baking powder

baking soda

Instructions
Preheat oven to 350°F.
Grease an 8 x 4 loaf pan and set aside.
Make flax egg: add ground flax and water to a small bowl and stir; set aside.
Peel bananas and add to a bowl; mash well with a fork. Set aside.
To bowl of a stand mixer, add softened vegan butter and mix.
Add both sugars and cream together with butter.
Add vanilla and flax egg to bowl and mix.
Add in mashed banana and mix to incorporate.
To a bowl, add flour, baking powder, baking soda, salt, and cinnamon. Whisk to combine.
To wet mixture, add half of the dry ingredient mixture and mix. Add the rest of the dry mixture and mix well, scraping down sides as needed.
Once mixture is ready, add to greased loaf pan. Bake at 350°F for 1 hour.
After 1 hour, set on cooling rack and let cool completely.
Notes
A stand mixer is not required here; I like to use one because I find it easiest. But a hand mixer or mixing by hand would work as well.
