  • 3 ripe bananas
  • 1 flax egg (1 tbsp ground flax seeds + 2 tbsp water)
  • ½ cup vegan butter, softened
  • cup white sugar
  • cup brown sugar
  • 1 tsp vanilla extract
  • cup all purpose flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon

Instructions

  • Preheat oven to 350°F.
  • Grease an 8 x 4 loaf pan and set aside.
  • Make flax egg: add ground flax and water to a small bowl and stir; set aside.
  • Peel bananas and add to a bowl; mash well with a fork. Set aside.
  • To bowl of a stand mixer, add softened vegan butter and mix.
  • Add both sugars and cream together with butter.
  • Add vanilla and flax egg to bowl and mix.
  • Add in mashed banana and mix to incorporate.
  • To a bowl, add flour, baking powder, baking soda, salt, and cinnamon. Whisk to combine.
  • To wet mixture, add half of the dry ingredient mixture and mix. Add the rest of the dry mixture and mix well, scraping down sides as needed.
  • Once mixture is ready, add to greased loaf pan. Bake at 350°F for 1 hour.
  • After 1 hour, set on cooling rack and let cool completely.

Notes

A stand mixer is not required here; I like to use one because I find it easiest. But a hand mixer or mixing by hand would work as well.
